Summary

A Spanish research institute with experience in European projects is coordinating a project proposal under the call H2020-FNR-05-2020. The aim of the project is to find out the relationship between combinations of pig livestock farming systems, husbandry and processing with the intrinsic quality of the products and extrinsic quality of the production systems and answering the societal demands. They are looking for pig producers, producers of pork meat or pork products.

Description

Animal products constitute an important source of good quality, digestible proteins, minerals and vitamins in human consumption patterns and are part of a healthy and balanced diet. Due to the increasing demand at global level for animal derived food and the mounting pressure over land use, further intensification and expansion of animal production is expected. Farming systems and the agri-food chain need to be (re)designed in a holistic manner to best reconcile the various demands concerning productivity, sustainability, quality and other societal values, for now and the future.

The aim of this proposal is to undertake an assessment of the intrinsic quality of pork and pork products stemming from different production systems. The proposal will study the relation between quality (safety, nutritional and sensorial) and husbandry (e.g. breeding, feeding, management).
Research and innovation activities are proposed to improve quality of products through husbandry in diverse pig production systems. Work is designed to understand better the societal demands in pig livestock farming systems and on products through a whole chain approach and to identify the claims (in the labels and those that are general beliefs). Innovative approaches will be engaged to evaluate consumers’ perceptions. Relationships between quality of pork and the production systems will be screened by means of a large-scale trial including market pork and pork products from different EU regions. More insight in understanding factors to increase the added value and quality of products will be gained through specific research trials. Intrinsic quality, focused on food safety, nutritional value and organoleptic quality and sensorial features of pork products will be assessed in all the trials. Extrinsic quality in particular environmental impact and animal welfare will be also addressed. A systemic and holistic approach will be applied to find out the relationship between combinations of pig livestock farming systems (extensive, intensive and organic), husbandry (breeding, feeding, management, sex, slaughtering) and processing (traditional, standard, high quality) with the intrinsic quality (food safety, nutritional value and organoleptic and sensorial quality) of the products and extrinsic quality of the production systems and answering the societal demands and claims and the authentication procedures. The activities will have a multi-actor approach and will cultivate new networks between them and within and between countries. Interactions between research, producers, processors and other industrials and society will be achieved and will enrich the activities of the project.

• Industrial partner / Producer of pork meat or pork products (fermented, smoked, cooked, etc…): organic products from Norway or Sweden / conventional pork products from Romania, Bulgaria, Czech Republic, Hungary, Estonia, Letonia, Lituania or Poland.
