Technology for production of ferments for dairy industry

Country of Origin: Latvia
Reference Number: TOLV20171220001
Publication Date: 15 January 2018

Summary

A company from Latvia offers a technology for production of ferments for dairy industry using microorganisms. Using these ferments a variety of popular milk products can be produced, e.g. yoghurt, kefir, cultured buttermilk or cultured cream. Main advantage of the technology is using biological and ecological solutions with the same effect on the final product. The company offers commercial agreement with technical assistance.

Description

Fermented milk is a common name for products such as yoghurt, kefir, cultured buttermilk, cultured cream. The fermented milk products are produced using starter microorganism cultures which converts part of the lactose to lactic acid. Specifically selected microorganisms (Lactococcus lactis, Streptococcus thermophilus and Candida strains) are added to milk to initiate and ensure required fermentation under controlled conditions.
The company from Latvia dealing with designing and manufacturing of bioreactor lines offers technology for production of ferments for dairy industry. Biotechnology in the classical sense is defined as an industrial production technique, where living organisms or their components (e.g. enzymes) carry out the production of the required material. Technologies based on “microbial fermentation's” can be defined as traditional biotechnological techniques. In this case, microorganisms in an artificial environment produce their primary or secondary metabolites, such as antibiotics, citric acid and alcohols. The company from Latvia is offering bioreactor line with such advantage as safe and automated cleaning and sterilisation of pipelines, that are both noticeable advantages for bioreactor lines, as most technology alternatives either include just one of the automated possibilities or request completely manual cleaning and sterilisation. The bioreactor line consists of seeding fermenters with working volumes of 10 and 100 litres, production fermenter with working volume of 1000 litres and 100, 150 and 1000 litre vessels for product storage in aseptic conditions. All fermenters are connected in a technological line via pipelines to ensure cleaning and sterilization with CIP/SIP (Clean-in-Place/ Sterilization-in-Place) equipment. The technological line cleaning is performed with two mobile CIP devices. Data collection, processing and documentation is performed with SCADA (Supervisory control and data acquisition) software.
The company offers commercial agreement with technical assistance for installation of bioreactor line including provision of necessary agents and microbiological material.

Advantages and Innovations

Innovations for bioreactor lines compared to alternative technological solutions and other bioreactor lines:
- Safe and automated cleaning and sterilisation of pipelines (no need for manual cleaning or sterilisation as in most bioreactor lines). In order to facilitate and speed up the service object, it is possible to provide a remote connection using the Internet communication tools.
- Usage of original and effective magnetic coupling mixers in bioreactors. The working principle of the novel magnetically coupled drive is based on rotating a pair of magnetic rotors (drive and driven magnets) inside and outside a hermetic cylindrical housing. The drive magnets interact with the outer rotors, which are placed on the opposite side of the hermetic housing and also are supplied with a set of magnets, which are encapsulated in the rotors shell. In result, by applying rotation to the drive magnets, thanks to the magnetic interaction, the outer rotors are rotated simultaneously, thus resulting in mixing. The novel magnetic drive is easy scalable. Throughout the years, we have successfully applied such magnetic mixers in laboratory bioreactors of a 5 liter working volume and in industrial scale bioreactors until a working volume of 20 000 liters. Thanks to the implemented design, the stirrer operates as good as a conventional mechanical stirrer, but has the advantage of high sterility and low maintenance requirements, which makes it ideal for biotechnological and pharmaceutical applications.
Advantages for bioreactor lines:
- Usage of SCADA software to ensure the compliance with GMP (good manufacturing practice) rules.
- The quality system is certified according to ISO 9001:2015.
